Lemon Delicious


Hi all!

So I am new to this whole blogging business, but I decided that I would give it a go! Being a self-professed Pinterest addict, I am constantly trolling the recipes for new challenges and ideas.
I love finding new and delicious recipes to experiment with and see how they go, but sometimes even I will admit that granny knows best!

This recipe is from my grandmothers handwritten archives that I couldn't pass up on sharing. This dessert first came around at a family function where it was an instant hit! The original recipe was supposed to be set, but instead was baked making it a delicious twist on a tired recipe. Now a family favourite, it is definitely worth a mention!

We all call it Lemon Delicious, but I think it is actually called something else...... This is not a recipe for the faint of heart! Lemon Delicious is beautiful and a easy dessert to bring to any function!


Lemon Delicious
Ingredients:
2 shop bought Madeira cakes, sliced
250g lemon butter/curd
1 3/4  cup orange juice, divided
2x 250g packets of cream cheese, room temperature
200ml heavy cream, whipped
1/2 cup icing sugar
3 egg yolks, beaten (optional)

Method
Preheat oven to 175C.
Heat 1 cup of orange juice and the lemon curd over medium heat and keep stirring until smooth. (This can take a while depending on how dense the curd is.) Then let the  sliced cake soak in the warm mixture.

In a large mixing bowl, beat the cream cheese and the rest of the orange juice until smooth. Add in the icing sugar and beat until smooth. Fold in the egg yolks and whipped cream.

In a large baking dish add the two mixtures in 2 layers of each, starting with the cake mixture. Bake the mixture in the oven for 30 minutes until cooked.


If you are after an added hit, you can add a meringue to top the Lemon Delicious before baking. (Whip 3 egg whites until stiff peaks form, then slowly add 1/2 cup superfine sugar until stiff peaks and a shiny surface).
